Mango Salsa Chicken -- About half an hour
2 ripe mangos
½ cup onion, minced (white, red, or green. Or blue.)
1 bell pepper (red or yellow and finely chopped)
1 lime
1 tbs sugar
1 tsp salt
¼ cup fresh cilantro, chopped (or if you're like me, a lot more, because you're gonna just want to eat the cilantro raw)
Chicken
Peel the mangoes, and chop up the mango meat coarsely.
Again, you might want to get an extra mango, so's you can eat that one, while making the rest for the recipe. I suggest covering your Eating Mango in granulated sugar.
Chuck the mango in a bowl and stir in the remaining ingredients.
Squeeze the lime, wise-guy, don't just chuck it in whole.
Mix well.
This'll make 3 cups. If you're the type of person who uses three cups of goo per one piece of chicken, you're gonna need to make a little more of this.
This should serve about four or five.
